It almost feels greedy to ask - but does anyone know of a NAnt task that can build a DocProject project - or of any plans to build one?

I haven't used NAnt myself, but it may be fairly easy to create a custom task that can build a DocProject or DocSite based on DocProject's MSBuild task. Look near the bottom of the BuildDocProject.cs file for the Execute method, which is the entry point for MSBuild. I'm almost sure that the code you'd need from there uses all public APIs. And assuming that NAnt is not being executed by Visual Studio itself, you'd need to use the else blocks wherever DocProjectEnvironment.RunningInVisualStudio is evaluated in the MSBuild task (it's used in a few properties and the Execute method).

If you or somebody else builds an NAnt task I'd be happy to link to it from this site or possibly even host it here if you're willing to donate it :)
